Purple Sprouting Broccoli with Avocado Pesto

  1. ###Ingredients

    * 300g purple sprouting broccoli
    * a drizzle of olive oil for roasting
    * salt & pepper to taste

    **Avocado pesto**

    * 1/2 ripe avocado
    * 20-30g basil leaves
    * 20g cashews
    * the juice of 1 lemon
    * 1 tbsp extra virgin olive oil
    * 1/2 tbsp nutritional yeast
    * a generous pinch of salt

    **To Serve**

    * A sprinkle of toasted pumpkin seeds
    * a sprinkle of chili flakes

    ###Instructions

    1. Add the sprouting broccoli to a large baking tray covered with parchment paper. Generously drizzle with olive oil, salt and pepper. Toss until they are well coated and roast in the oven at 180 degrees Celsius for 20 minutes until soft.
    1. In the meantime make the pesto, add all the ingredients to a blender and blend until smooth and creamy.
    1. Spread the pesto onto a plate and add the broccoli on top. Sprinkle with the toasted pumpkin seeds and chili flakes.
