1. Sweet potato soup with chapel beignet, caramelized apple, toasted yulmu, and caviar

2. Hwe – red snapper, bergamot, fennel, satsuma

3. Eggplant Twigim with rice cakes, pine nut hummus, pickled turnip, and fermented red chili paste

4. Abalone with yuzu foam for dipping

5. Halibut with Jiri consommé, bean sprouts, and mustard greens

6. Dry aged pork with pistachios ssamjang, perilla kimchi, and savoy cabbage

7. Duck with black truffle jus, barley risotto, and a variety of side dishes (sorry – can’t remember all of them!)

8. Shrimp bibimbap with candied anchovies, seaweed rice, quail egg yolk

9. Froyo- daechu frozen yogurt, Korean dates, cranberry compote

10. Sesame ice cream sandwich with a yuzu-rose foam. In the middle is a cranberry cheesecake. Off to the side are raspberry truffles.

This was overall an excellent meal. The only miss was the first course, the sweet potato soup. It was VERY sweet and felt like starting with a dessert course. The remainder of the meal was otherwise great. The consommé with the halibut was deeply flavorful and in my opinion the best “bite” of the night. The desserts were not to sweet and well balanced.

    Was there a ‘food on a stick’ theme?

    That’s not to be a slight or anything, but it’s just kinda funny how half the dishes meet that brief.
