A Mediterranean diet friendly dessert: chia seed pudding.

For dessert I am less concerned about choosing nutrient dense fruit to add. Right now I have a bunch of golden raisins to eat. So I added a scoop, rehydrated them in a little water, added some cashew milk, and a bit of vanilla paste. A touch of salt. Gave it a 20 minute rest. And topped it with pistachios and cacao nibs. There isn’t much sugar here, whatever came from the vanilla paste and raisins.

Chia seed pudding is a great dessert that gives you a good fiber and omega-3 bonus. I use it as an excuse to get a serving of nuts in too.
