Sautéed frozen veggies in a little bit of EVOO wand added za’atar and other spices.
Air fried two Afia falafels
Topped it off with homemade tahini sauce, basil/mint sauce and tzatziki!

    Veggies

    – Frozen veggies- 1/2 cup
    – Olive oil 1-2 tsp
    – Salt/pepper
    – Za’atar seasoning 1/2 tsp
    – Onion powder 1/2 tsp
    – Garlic powder 1/2 tsp

    Instructions: heat olive oil in a pan on medium heat and add frozen veggies. Let them thaw completely and then add seasonings and sauté until veggies are slightly charred

    Basil/mint sauce:

    – 1/2 cup basil leaves
    – 1/4 cup mint leaves
    – 1/4 cup parsley leaves
    – 1/2 cup olive oil
    – 1 tsp Dijon mustard
    – zest and juice of 1/2 lemon
    – 1 clove garlic

    Instructions: add all ingredients to a blender and blend
