Dark specks in very recently canned food. Any idea what this could be?

    I canned some pork shoulder yesterday and I just noticed some dark specks that are definitely inside the jars today. I followed the process described here carefully: https://nchfp.uga.edu/how/can_05/strips_cubes_chunks.html The jars were hot packed, if that helps. The jars had been washed prior to canning and I had also wiped the rims with vinegar on a paper towel.

    What could this be? I’ve never had this happen before and not sure if this is just harmless discoloration from the contents of the jar or if this is a problem. Thanks in advance!
