I was trying to use this recipe to make bagels:

I ended up with biscuits. I substituted the almond flour for coconut flour without using or looking up a proper conversion. For the called for 2 cups of almond flour, I used 1 1/3 cups of coconut flour. Once I had the dough – which is a bit crumbly – I realized I didn’t have bagel dough. So I tried to salvage it by balling it up and throwing it in the oven at the prescribed 400 degrees anyways.

I don’t know how long they were in the oven. I just baked until the tops were golden brown. My best estimate is 10 minutes.

They came out buttery, cheesy biscuits. Perfect for throwing a slice of butter in and having as a side.

I hope my biscuit mistake can make someone else happy!

    Did you just replace the 2 cups with 1.3c almond flour, or was it 1.3 coconut/0.6 almond?
