Hearty soup perfect for a cold day.

    Vegetable, beef, and barley soup:

    16 oz hamburger or stew beef

    14.5 oz can petite diced tomatoes

    1 packet Knorr French Onion recipe mix/soup

    1 tsp Italian seasoning

    8 cups beef broth (I use Better Than Bouillion)

    4 cups water – omit for thicker, more stew-like

    1/2 cup red wine, optional

    1 cup onion (I used white)

    8 oz mushrooms, sliced and lightly chopped

    3-4 ribs celery, diced

    4 med carrots, diced

    1 potato, Russet, diced

    1/2 cup frozen green beans, optional

    1 cup barley (pearl barley, quick ok)

    Few sprigs of thyme, if desired, or 1/2 tsp dried

    Salt and pepper, to taste

    Preparation:

    Brown hamburger or stew beef in skillet. Drain fat, if any. Add to slow cooker. Add remaining ingredients. Cook on high 4 hours or low 6-7 hours.
