TACOS
2 tablespoons extra virgin olive oil
1 large head cauliflower, cut into florets
yellow onion, chopped
1 Anaheim pepper, sliced
3 chipotle peppers in adobo, chopped
oregano
kosher salt
200ml red enchilada sauce
corn tortillas, warmed
Cheese of choice
Water
CREAMY JALAPEÑO VERDE
1/2 cup olive oil mayo
2 tablespoons extra virgin olive oil
1 Anaheim pepper
1 jalapeno
Pinch red pepper flakes
Paprika
1 bunch fresh cilantro
Few green onions
2 cloves garlic, chopped
Lil bit of honey
Juice of 2-3 limes

Tacos:
Chop everything while oil heats up. Dump in cauliflower, onions and Anaheim pepper in on high heat and cook 5 minutes or so til the cauliflower takes on color and things are a little crispy. Ad a few tablespoons of water, chopped Chipotle peppers, and enchilada sauce (I bought this but it’s easy to make) and cook on medium heat until sauce is thick (about 10 minutes)

Sauce:
Put all ingredients In a. Blender or food processor

Serving: warm corn tortillas in microwave, add cauliflower filling, top with cheese of choice, cilantro and avocado (optional) and then drizzle with sauce.

My meat loving partner had thirds!

If you don’t eat corn, whole wheat flour tortillas would work here and be a bit more on the diet plan but I love me some corn tortillas
