Egg White Frittata:

1 tsp grapeseed or olive oil

1 shallot

4 handfuls of shredded kale

2 handfuls of grape tomatoes

1 carton (500ml) of egg whites

4 tsp nutritional yeast (optional)

80g cheddar cheese

A few sprigs of dill

Salt & pepper to taste

Preheat oven to 375F

Dice shallot and cut grape tomatoes in half, shred kale

Heat oil over medium in a cast iron skillet

Saute shallot until translucent then add tomatoes and sautee for about a minute

Add kale and sprinkle with salt

Once kale is cooked down stir in dill and nutritional yeast

Turn off heat and pour egg whites over the vegetables then shred 80g of cheddar cheese over the top, add pepper to taste

Bake at 375 for 20-25 minutes

Serves 4

My side salad was cucumber, watermelon, green apple, and basil

1/2 an avocado, Silver Hills LBB toast, becel margarine, 430 calories
