Someone on our local FB group is selling these green beans. They don’t look quite right to me, but I only can jams and jellies so I could be totally off the mark here. I googled, but it was vague and I got many differing answers. I don’t want to harsh this woman’s mellow, but I don’t want the many people that want to buy these beans to get sick, either if there’s a problem

    Green beans are notorious for being canned improperly and getting folk sick.

    The minimum amount of liquid that should be left in the jar if siphoning occurs is 50%. These look right on the border of unsafe to me. Regardless we don’t know what her canning practices are so it’s impossible to say if that is a safe product or not. Several states have cottage food laws that disallow low acid goods from being sold for safety’s sake.
