Jello Ribbon Mold from the Betty Crocker Do-Ahead Cookbook, 1977

  1. I found this in the 1977 Betty Crocker Do-Ahead Cookbook. I have not tried this yet but I thought many of you might appreciate this. I am interested in trying this, but I’d probably sub out strawberry Jello and frozen strawberries instead for the raspberry layer.

    #RIBBON MOLD
    *Store no longer than 3 days. Makes enough for 9 to 12 servings.*

    ##Raspberry Layer
    1 cup boiling water
    1 package (3 ounces) raspberry-flavored gelatin
    1 package (10 ounces) frozen raspberries

    ##Orange Layer
    1 cup boiling water
    1 package (3 ounces) orange-flavored gelatin
    1 package (8 ounces) cream cheese, softened
    1 can (11 ounces) mandarin orange segments

    ##Lime Layer
    1 cup boiling water
    1 package (3 ounces) lime-flavored gelatin
    1 can (8¼ ounces) crushed pineapple

    **Raspberry Layer:** Pour boiling water on raspberry-flavored gelatin in large bowl; stir until gelatin is dissolved. Stir in frozen raspberries. Chill until thickened slightly but not set; pour into 8-cup mold or 9x9x2-inch baking pan. Chill until almost firm.

    **Orange Layer:** Pour boiling water on orange-flavored gelatin in large bowl; stir until gelatin is dissolved; stir gradually into cream cheese. Chill until thickened slightly but not set. Mix in orange segments (with syrup); pour evenly on raspberry layer. Chill until almost firm.

    **Lime Layer:** Pour boiling water on lime-flavored gelatin in large bowl; stir until gelatin is dissolved. Stir in pineapple (with syrup). Chill until thickened slightly but not set; pour evenly on orange layer. Chill until firm; cover. (Can be served immediately.)

    ■ **At serving time, unmold Ribbon Mold or cut into pieces.**

    Pour the orange mixture over the slightly-thickened raspberry layer in the mold. A lime layer comes next.

    Unmold by wrapping a hot, damp towel carefully around the mold. Lift off the mold.
