1. Harissa air-fryer salmon, roasted brussel sprouts, roasted sweet potatoes and habanero chimichurri.

  2. Soba (these were brown rice+buckwheat) noodles, Cajun chicken thighs, veggies (including the pickled radishes I made), and a dressing with tahini-soy-ginger-miso-black vinegar.

  3. Cajun chicken, pinquito beans, roasted veggies, chimichurri

I mixed up a few of the mains I made into different meals.
