Brian is one of those foods I grew up eating and didn't appreciate at the time, but now I'm all for. Didn't follow a real recipe, just loosely copied what I remembered my mom doing, but here's my steps:
1. Cut up 3-4 potatoes, 4 zucchini (green and yellow), 1 eggplant and 2 bell peppers into roughly the same size chunks, and slice up an onion (I slice it thinner than the veg, so it gets nice and jammy).
2. Pulse or grate 1-2 tomatoes with some garlic, olive oil, salt, pepper, oregano and parsley.
3. Toss veg in the sauce, lay in a single layer, add some water or stock to the bottom of the pan, drizzle some more olive oil over the top.
4. Cover in foil, and place in 380F oven for 30'.
5. Uncover, lightly mix around and bake until desired doneness/color, roughly an hour for me with 5' broil at the end.

    I love Briam and Fasolakia. Both are lovely vegetable dishes. I happily eat both with some crusty bread.
