Hey all,

I found this recipe for Persian pickles and wondering if I can water bath it? It's heavy on the vinegar so I think it should be okay and I think it's relatively similar to other safe pickled vegetable recipes.

    No need to can it, and canning it would likely ruin it by turning it all to mush. I have made huge batches of torshi in just gasketed jars.
