Yesterday I made mini chickpeas and turned them into a stew. I used some dry chorizo – off plan but packs a huge flavor punch. You don’t need much to flavor a soup. The base is a bit of chicken broth concentrate, some tomato, and the bean cooking liquid. The spices are dry thyme, 2 kinds of chili powder, garlic, and saffron. I added farro to the pot.

I added leftover kale to serve since I forgot to buy some.

It was hearty, tasty and a little spicy. I served with a drizzle of olive oil.

But it did absorb the liquid quickly. So I needed to add additional to serve.
