My local Walmart had pineapple on sale for 1.89 so I bought a couple to can. Two pineapple made three pints three halves. I cut and cleaned the fruit boiled 4 cups of water with the core in it and let that simmer then raw packed the pineapple left an inch of head space and boiled for 20 minutes.

Love these, and you were actually overcautious which is unusual for this sub.
you only need 1/2 in headspace and for pints you only have to boil 15 minutes.

ho-lee smokes why have never thought of this!? there is a new “it’s going bad tomorrow” store around the corner and they REGULARLY have pineapple on for $1 (and i live in canada that is…it’s a ludicrously low price)
