Black salt brined for 48 hours. Over night uncovered in the fridge. Smothered with compose butter with herbs from my garden and garlic. Baked at 225 for 32.5 mins a pound with water and rosemary under the pan. 20 min rest and then 8 minutes at 550 for the sear. Damn it was good

    Many do not know the difference between rare

    And medium rare

    Is just 2-3 degrees

    Never more than 135
