On average small batch organic walnut butter is $30 for 200g. There are cheaper options but they have added palm oil, sugar, coconut, pumpkin seeds etc. I have just made 1.7 KG in less an hour (not including picking, shelling and de-husking) I understand not everyone has access to a tree but you can buy them in bulk at very good prices or just buy a small bag and have some fun making your own nut butter.

The darker jars have raw Organic Cacau Buttons and the remainder I added my own hand made New Zealand sea salt.

RECIPE

Place the shelled and husked walnuts on an oven tray . Roast them at 300°F 180C for 12 minutes until looking a bit moist or oily on top and smelling fragrant. After ten minutes watch carefully to avoid burning. If you skip this stage they are very bitter.

From now on the food processor does all the work.

Add the roasted walnuts to a food processor and process. They will go from a flour to a lumpy paste and continue to a thick liquid depending how long you leave them in. They do thicken slightly again after standing. Scrape down the sides and process another couple of minutes or so until it is runny/oily and dripping. At this stage you add your salt incrementally until you reach your desired flavour.

I added Cacau to my second batch after the salt, I’ve seen a few versions with coconut sugar or cinnamon.
