I had to pressurize them twice since they didn't seal the first time (I think I had the heat too low) and now they look cooked instead of blanched. They also look like they lost some of the water inside the jar. Will they still be good? They are sealed now and have been sitting for 24 hours and haven't popped.

What processing time and pressure did you use? I am concerned by your comment saying the heat was too low that you weren’t watching the pressure close enough. If you didn’t maintain proper pressure for the whole processing time, they would not be safe even with a good seal.
When you say haven’t popped, do you mean the middle of the lid is not down?
Did you take the rings off to check the seal?
You do lose some quality when you reprocess.
