Hi all. I got a pressure canner and the Ball book of canning and preserving for Christmas and I think I’m ready to try something. I’ve been saving wing tips in the freezer for the past year (we’ve made a lot of wings ha). Can I make chicken broth with just wing tips? When I started saving wing tips I was using instructions from Recipe Tin Eats to separate the wing pieces, and she mentions to save the wing tips to make broth (https://www.recipetineats.com/chicken-stock-recipe/). I know her instructions don’t include canning instructions, so I can’t use this to can.

The Ball book says to use the carcass from a 4-5 lb chicken to make broth, but I only know the weight of the wing tips I have.

Thanks for the help and sorry for the newbie question 😅 I’m just nervous to mess anything up

  1. Yes you can use wing tips. Follow the directions from your book for processing time and pressure for your altitude.

    My local grocery store sells raw chicken necks for a couple bucks per package. I use those to make stock when I don’t have and carcasses or bones saved up in my freezer.

  2. Wing tips are fine, also chicken feet make good broth too. As for weight I dunno I never weigh anything. I have a giant stock pot that I put enough chicken in that it looks right then my veggies, seasoning and water. Stock is pretty forgiving in the making part just make sure you follow directions for the canning.

  3. Wing tips contain a fair amount of fat so make sure you skim as much off as possible when jarring up the stock. Use vinegar to wipe the rims because grease can affect the seal. Best of luck to you; broth is a very good choice to start your pressure canning journey!
