Recipe makes 3 servings.
Ingredients:
* onion, 187 g * snap peas, 130 g * mushrooms, 124 g * carrot, 105 g * Beyond Steak, 1 bag * yukon gold potato (or regular potato), 227 g * glass noodles* or other noodle (25 g dry weight) * Broth and seasonings: 2 cups of vegan dashi (see below for recipe), 1 tsp no-beef bouillon (Better than Bouillon), 4 T soy sauce, 1 T mirin, 1/2 T sugar, 1 T sake, 1 tsp sesame oil. Add more water if desired. * to thicken broth: 1 tsp corn starch in water
* vegan dashi: boil water add crumbled seaweed, a few of the mushrooms, optionally strain
* I used glass noodles even though the recipe called for shirataki. You can use whatever noodle you want. Or even leave them out.
