This is my take on niçoise. I have air fryer salmon. A boiled egg. Random assortment of olives. Capers. Arugula and radicchio that is hiding in there. Cherry tomatoes. Cucumbers because I chopped them. And some air fryer yellow potatoes. Steamed green beans.
The dressing was improvised with evoo, red wine vinegar, onion powder, garlic powder, Aleppo, Dijon, honey, and preserved lemon paste. This dressing was absolutely delicious.
