A few little experiments for dinner. I made a lot of dishes but they came together fast.

  1. Roasted cauliflower and tomatoes. I added the tomatoes for the last 5 or so minutes to get hot and soft.

  2. Yogurt dip: preserved lemon paste, grated garlic, Aleppo, salt, and a dash of olive oil

  3. Chicken: marinated overnight in yogurt and preserved lemon paste with some spicy ground calibrian chilies. Then tossed with an “eastern Mediterranean” spice blend that had sumac, garlic powder, chilies, and some herbs. Cooked that in the air fryer.

  4. And last was za’tar socca. I love socca and it is super easy to make. It is a chickpea flatbread that doesn’t need much more than water and chickpea flour and olive oil. I don’t bake at all and this requires no skill. I used this recipe as a base. https://www.loveandlemons.com/socca-recipe/

It all turned out yummy with minimal prep.
