And my dinner guest had to cancel. I was thinking about cooking one tonight and then another tomorrow night. Is it OK to keep one in the fridge for three days exposed to air? Thanks so much.

Also, could I freeze one of them? Not sure if they were previously frozen.

You need to cover them in the fridge or at the very least wrap them up in that foil

Def fine to dry brine for 3 days, I do it all the time with other (fattier) cuts of steak.

I dry brine 72 hours max. It’s just personal preference.

Not a problem as long as you had them salted well. I dry brined steaks for a week. Throw in cast iron and enjoy a beautiful crust.
