First time water Bath canning strawberry jam. I followed the ball recipe and it did seal, but why did it separate? Assuming it’s still sealed in 24 hours, should this be ok to place in shelf? I don’t want to waste all of this

Stick it in the fridge. The bubbles – did those come during the water bath or did you forget to remove them with a stick before water bathing?

I forgot to debubble . Rookie mistake since this is my first time . So did I ruin it all ? It’s definitely all sealed. I did wipe rims and measured headspace and totally forgot to debubble .

This is very common for strawberry jam. Strawberries have a lot of air in them and unless you cook it for a very long time it will do this. As long as you followed a safe and tested recipe and the lid is sealed it’s safe. It sounds like you did. It’s not a big deal, I just mix mine up with a butter knife when I open the jar when this happens.
