It could just be something in the chicken. When you butcher meat, you find a lot of stuff like this, and it is removed mainly to visually look better. They just missed a little stringy thing.

I saw something just like that in a pack of fresh salmon once, only it was clear and raw and wriggling.

I don’t eat raw salmon as a rule now.
