    6. Pork cheek, remoulade sauce, sweat and sour turnips
    7. Roasted sunchokes, pan cooked and finished with honey endive, honey fermented garlic, cheese sauce
    8. Pumpkin puree, steamed pollack, cockles and razor clans XO, smoked beurre blanc, sweat and sour pumpkin
    9. choux filled with hay cream; mushroom pear caramel sauce
    10. Amazake ice cream, pine caramel, candied sunflower seeds
