    So the recipie for the mediterranean vegtables are as follows this makes a lot and you use a little for this dish so I like to have it for dinner the night before and save some for breakfast the next day

    Ingredients

    1 zucchini sliced into rounds ½ inch thick
    5 oz cherry tomatoes
    1 bell pepper diced into medium-large chunks
    ½ red onion diced into medium-large chunks
    2 Tablespoons olive oil
    1 teaspoon dried oregano
    ¼ teaspoon smoked paprika
    ½ teaspoon salt
    pepper to taste

    Method

    Prep the vegetables (dice the onion and bell pepper, slice the zucchini into thick coins). Skewer the onion onto a skewer so the onion stays in its layers this helps the thinned onion layers not to burn and add the vegetables to a large bowl.

    Add the olive oil, oregano, smoked paprika, salt, and a sprinkling of black pepper. Stir until vegetables are coated in the seasoning.

    Add to the air fryer basket (leave the cherry tomatoes out and add at the last 5 mins). Air fry at 400 degrees F for 15 minutes, tossing every 5 minutes.

    Optional: garnish with corriander.

    For the breakfast just toast a piece of sourdough and spread with fetta or avocado poach and egg and serve with the vegtables on a plate.
