Far from perfect med diet but I'm pleased to have found something med diet adjacent I can put together during a flare up of chronic illness so thought I'd share. I'd usually make the aubergine dip myself and have a load of fresh veg on there. The fish is tinned sardines.

    For anyone interested the aubergine dip I usually do is a Baba ganouch kinda thing. Roast aubergines for around 45 mins (or about 20 cut in half and put in the air fryer), then just blend with some tahini, EVOO, paprika and garlic. I usually make it in advance whenever we’ve already got the oven on for dinner or something so I’m not running the oven that long for just two aubergines
