I finally opened a vacuum sealed pair of 7- and 12-month Queijo Sao Jorge from Azores that I bought 14 months ago. It is delicious, nutty, firm and very tangy. The 7-month is much more tangy than the 12-month. The latter having a more balanced flavor.
When I look up the description it's described as just moderately tangy.
Do you think I'm enjoying the intended flavor? If tang increased with age(?) then that could explain the strong kick except the older cheese is less potent!
Or do younger cheeses have more tang?
