Orrechiette with Pepper Bacon, Corn, Leeks, Jalapenos, Lime, and Queso Fresco

    Pretty straightforward here, I just rendered the bacon fat, cooked the leeks, corn and peppers for a few minutes, then tossed in the cooked pasta with a little of its water (although I think I’ll use a little more next time) and the cheese, and stirred to incorporate, then added the lime juice after everything was off the heat.

    This sounds good as a cold pasta salad dish too.
