Dinner: chicken breast in the air fryer with a “Persian curry” seasoning blend, some assorted white beans – I had to finish 2 packs of dried. And an herby sauce with mint, parsley, cilantro, garlic, red wine vinegar, habanero, and evoo. It is not too hot and adds nice brightness to the plate. Grilled zucchini inspired by the recipe I posted. This is my new favorite way to have squash.

Dessert: plain skyr, early season nectarines, a little bit of honey, and pistachios.
