I wanted to share my recipe for a Mexican style "ranch" I use on veggie bowls (this is a 2 serving bowl with black beans/roasted corn/taco seasoned roasted cauliflower/cherry tomatoes, cilantro, green onions with a bit of brown rice!). I find it helps mix us meals and makes them taste different. Im vegetarian and my omnivore partner says this doesn't need meat, so I have no recommendations on that front
Greek yogurt mexican ranch:
1/4 c plain yogurt
1/4 c olive oil mayo
Juice of one lime (+ zest if you're feeling citrusy)
2 tbsp? Chopped cilantro
1 chopped green onion
1/4 tsp garlic powder
1/4 tsp onion powder
Pinch of salt
Couple cracks if black pepper (optional)
The mayo is a processed but it's simple to make your own, I was just lazy today.

Straying a little bit away from Mediterranean with a Mexican inspired dressing, but it does look good.
Have you ever mixed Greek yogurt with your favorite salsa (and maybe some lime juice if it’s thick?) It’s delicious as dressing!
