What would you do with 10# of strawberries?
Went strawberry picking today and Mother’s Day is this weekend 🤔 the stars are aligning for a fresh strawberry based baked thing! Here are my top contenders:
Classic strawberry pound cake: pros are it’s delicious and I haven’t actually had one recently so it’s not overdone in my circle. Maybe a bit basic though?
Strawberry lemonade cupcakes: pros are cupcakes are the classic portable and pretty dessert. Easy and a crowd pleaser. I’d do a lemon cupcake and fill it with homemade strawberry jam, and top it with a merengue. Sounds amazing but also like a lot more time HA
Strawberry bars or crumble: pros are they’re quick, easy, and delicious. Not really a showstopper visually but at the end of the day I know whatever I make will be greatly appreciated (and delicious!).
I’d garnish all of these with fresh strawberry slices in addition to whatever’s inside.
Some context also, we will be meeting for Mother’s Day lunch at a restaurant and I’ll be giving it to the mothers (mine and my bf’s, so just two) to take home. I can’t assemble at the location.
I’m not married to any of these ideas though and would love to hear some other suggestions! I’ll also have a ton left over that I’ll probably end up freezing or turning into jam or something.

Eat three pounds a day for three days then macerate the tenth pound and put it on Bluebell homemade vanilla.
I would make a cheesecake with a berry compote, and then use the rest of them to make jam.
Eat them until I feel sick, repeatedly until they’re gone. Also freeze some for smoothies and make pavlova. Oh and cheesecake.
If you have the equipment, sorbet/ice cream season is fast approaching if not already here. For actual baking, though, you can make strawberry jam and use them for thumbprint cookies or danishes.
Strawberry ruhbarb pies
I find frosted stuff hard to transport. But I don’t own any containers to make it easy haha.
I’d make strawberry poptarts, strawberry cookies or strawberry cheesecake bites (strawberry cheesecake cut into tiny cubes and covered in chocolate).
Your cupcake ideas and bars sound very tasty and intricate as well though. I’m sure the moms will love it!!!

I’d try to put the whole strawberry in my mouth
jam, icecream, freeze, or freeze dry (if you have something to do that).. I mean.. make anything you want with them now, but you’re going to end up freezing alot of that anyway with all them strawberriwa
Eat some, make some into smoothies, make the rest into pies and crisps

Also, freezer jam, which is low-labour, space-saving, preserves a lot of fresh flavour, and can be used in many different baking projects. You can put it in a cake (makes great filling), on a shortcake, on ice cream, in ice cream, make milkshakes, use as the basis for a gelée for a composed dessert, glaze fresh berries later in the season, add to a custard…omg, so many possibilities. The main thing is to just make sure they last, because those ripe beauties will be mouldy in a day or so.
Chocolate covered strawberries, freeze majority, strawberry cheesecake
Eat as much as you can.
Then make tons of strawberry summer cake.
Make a compote for pancakes etc.
Leftovers can go to your freezer.
Strawberry Habanero jam is my go too.
To last for a while: Strawberry syrup, strawberry compote, strawberry ice cream, freeze some whole or chopped, dried strawberries, strawberry butter (good on popovers, scones, or biscuits, you can freeze some to last)
For more immediate: strawberry cake/ cupcakes, strawberry shortcake, strawberry buttercream, strawberry muffins, strawberry cheesecake
Pro tip: strawberry and rhubarb are SO good together and it’s in season

I make a reduction to use for cakes, cupcakes, and buttercream. I also chip some up and make a sauce for strawberry shortcake. I portion them out for my recipes and freeze. They freeze really well and stay good in the freezer for quite some time!

Ice cream! Jam! Smoothies! Cut em up and add sugar then put that on EVERYTHING. Eat em.
Every year I make my friend the Fresh Strawberry Pie from ATK. They came up with the perfect binder where you crush some of the uglier strawberries with a little gelatin and a little low sugar pectin and sugar. It’s a mile high pie so it looks very impressive. I haven’t used the crust I have my own that I make.

I like to make strawberry basil lemonade, it’s so yummy! You can just freeze them in little portions and use them whenever you want to add them to lemonade. Are those June bearing or ever bearing? They look absolutely fantastic!!
Not baking but I’ve made 8lbs of chocolate covered strawberries for this weekend. Moms love them 🤷🏽♀️

At the end of strawberry season, I buy a whole flat, remove the stems, cube them, then cook them down until the majority of the liquid is gone (I don’t add any sugar, just the fruit). I then put it in my Vitamix and blend it smooth until the seeds are mostly gone so I don’t have to strain them. I pour them into jars and freeze the liquid. I have used the unsweetened strawberry compote on ice cream, I’ve made strawberry cupcakes with strawberry curd centers and strawberry icing. I’ve used it on pancakes and crepes, spread it on toast.
I know it’s not baking buuuuutttt you can dehydrate them and kinda have like strawberry chips. You can make strawberry extract out of the dried strawberries for baking. They’ve just gotta sit for a while to infuse. If you drink alcohol, you can chop up fresh strawberries and put them in a container with sugar and vodka. Let it sit for a few days and now you have strawberry vodka to add to mixed drinks/lemonade.
Eat about 2 pounds in one sitting, then probably slice the rest and dehydrate them for snacks.
