* add starter
* slap and fold for 10 min
* add salt then slap and fold for 10 min -3 coil folds every hour
* preshape and rest for 20 min
* final shape and rest in banneton for 10 min
* cold fermentation for 12 hours
My kitchen was 79 degrees.
