Minestrone soup with macaroni

    Ingredients:

    1 onion
    1 celery
    1/2 carrot
    1 potato
    1 cup of chickpeas soaked overnight
    12 cherry tomatoes
    1 cup of macaroni
    3 garlic cloves
    1 spoon of tomato paste
    Little bit of oregano, salt and pepper
    500g of chicken stock

    Method:

    First chop and sauté the garlic in the pan (add peperoncino if you want extra kick), then add the bacon and the chopped onion, carrot and celery in the pot. Add the chopped tomatoes, tomato paste, the rest of the ingredients, and add stock water. Simmer for an hour and a half.
