Ok so was at work and was reading on recipes for beans since I really wanna try my best at the med diet for my health and make some changes in my life. Here's a recipe I kind of jsut threw together, and I'll be honest it turned out amazing ! Sorry you can't really see everything, it stewed a bit too long and went a bit mushy.

-extra virgin olive oil
-garlic and shallots
-white beans
-artichokes
-diced tomatoes canned
-diced green and yellow peppers
-grape tomatoes
-kale chopped before I finished for some texture.
-basil
-fresh lemon squeezed
-marsala wine reduced

Basically olive oil, fry garlic and shallots and than added some marsala. Added artichokes, peppers and beans. Season salt and pepper to taste .

Cooked it on low than added diced tomatoes , grape tomatoes to blister , than added my kale just before it finished so it'd have a slight crunch. Than I played the dish and I wish I had fresh parm but I'm always making greek salads so had extra feta , than to be fancy I added a basil leaf lol

I'll be honest , I went through some tough times recently, fell off the wagon and was eating processed and red meats , pizza and all kinds of stuff. I felt terrible the other morning I woke up, so I got fed up and decided I'm going to make some changes and this is where I'm starting…again.

Obviously being active and daily exercise is my plan but figured I'd share this with you all. Thanks !

    By the way, would have went great with a crusty whole grain bread or pita and hummus. Thus is probably the best thing I’ve eaten and I feel amazing after.

    Thank you for the recipe. I’ve been eating crummy for 2 days. Stressed out and alone for my birthday. Had serious sugar for the first time in 8 weeks and now regretting my choices. I needed some motivation. 😉
