Hello, I’m trying to make home shawarma, but pretty serious about it so I have the required tools, and spices.
What I’m lacking is the cut of meat. The picture is taking from a YT video, Arabic speaking guy who has a restaurant and goes into some details on how he makes his shawarma.
He claims this piece is “thigh” meat, which when I googled in English I get the shank. To me this looks like Round, which makes sense why he calls it thigh. Am I correct? Or is this a different cut?

Looks like a cleaned up shoulder to me. But I would also consider a round cut to be much closer to the “thigh” than a shank would.
Shank would be closer to shin than thigh. That looks like a round cut to me. Trust the Arab butcher when he talks about shawarma
