Ravioli with ricotta and herbs

    Tonight, we made homemade ravioli with a cheese & herb filling, tossed with a light butter and sage sauce with diced prosciutto.

    **Dough**
    100g 00 flour
    100g All-Purpose flour
    2 eggs

    **Filling**
    250g ricotta
    50g parmigiano reggiano
    1 tsp nutmeg
    1 tbsp garlic paste
    3 tbsp fresh herbs*
    Hint of lemon zest
    Pinch of salt & pepper, to taste

    **Sauce**
    Butter
    Sage – finely chopped and a few small whole leaves
    Heavy cream
    Diced prosciutto
    Parmigiano reggiano

    *The recipe calls for parsley (which we’ve always used before), but our herb garden was low on parsley and booming with others, so we used a mixture of primarily basil, mint and oregano, with a bit of parsley and sage.
