For me, Manifest in Liverpool is consistently the best restaurant in the area. Paul Durand earned his stripes at Moor Hall and 21212 and now puts out fresh, exciting and most important delicious food. What we ate:
Roast rack of lamb, turnip, wild garlic, potato fondant, spiced sweetbread
Turbot, Claremont farm asparagus, celeriac, hen of the woods, aged caviar
Cured mackerel, heritage tomato, fennel, nasturtium
Still warm salt and vinegar crisps
Poached Colchester oysters, forced rhubarb, pickled shallots
Milk chocolate, caramel, shortbread (a millionaires shortbread turned up to one billion)
Highly recommended!

I’m curious what a “forced rhubarb” is, and how it differs from “reluctant but otherwise willing rhubarb”.
