I have had a bit of takeout in the past week. And I am trying to limit groceries since I am traveling soon.

Here is a round up.
1. I absolutely love Spanish tortillas, they can be labor intensive. So I cheated with the air fryer and the oven. A quick breakfast of tortilla and a little bit of avocado.

  1. I mage some harissa wings for Memorial Day, the beans were from the freezer, and a side of broccolini sautéed with garlic, and some cucumber and tomato in a grapefruit vinegar and olive oil.

  2. Salad for lunch with random bitter lettuces, carrots, cucumber, chickpeas, avocado, and canned mackerel. Lemon vinaigrette quickly mixed up.

  3. Breakfast bowl with Greek yogurt, paleo granola, strawberries, hemp seeds, and pistachios.

  4. Part takeout. Part home cooked. I made some salmon, grabbed a white bean/tomato/olive/arugula salad from the deli, and added some extra arugula and radicchio.

  5. All from the deli – rotisserie chicken. Kale Cesar with farro and sourdough croutons. Leftover chimichurri for the chicken.

    Ooh do you have a recipe for the tortilla? I LOVE tortilla de papa but I never make them because they’re so much work haha
