My step father passed not long ago and was really into canning. We have been going through all the stuff he canned. We pulled all the pickles out he canned about 4 years ago and there was this green slime rining the top of all the dill pickle jars. Are these safe to eat or are they bad?

    Canned goods are only good for 12-18 months, maybe 24 if you push it. I wouldn’t recommend anything past that.

    The biggest question is: What recipe(s) did he use and did he follow the safety standards at the time he canned these?

    If you are unsure of how these were canned, then I would be cautious.

  3. Headspace seems off on this jar. I suspect the seal failed and not safe to eat.

    Personally, I would pass. Compost the contents and clean the jars for later use.
