Saw this and thought I'd give it a shot, actually turned out to be delicious!

Sauce:

Brown 2-3 mild Italian sausages, taken out of the casing

Add a finely chopped shallot (I used half of a larger one)

Deglaze with ~100ml wine and simmer

Stir in a spoonful of Gochujang paste

Dash of white pepper

Dash of trader Joe's mushroom umami seasoning

Chili flakes to taste

Add 250 ml heavy cream, simmer

Add a couple ladels of pasta water and stir in your cooked pasta of choice, finish in sauce pan until evenly coated. Take off heat and stir in 100g of Parmigiano Reggiano or Pecorino Romano.

Plate and finish with more Parm, cracked black pepper and thinly sliced green onion.

I'll 100% make this again in the future, it might also be good with a touch of miso paste
