This recipe is great for when you have bananas about to go bad, along with any other fruit that might be a bit past their prime.

For every banana, add 2 eggs and a splash of vanilla or almond extract (optional) to a blender and blend until smooth.

Take any fruit you may have such as berries or apples and pears and cut up into bite size pieces and place into a small sauce pan covered with a lid over medium heat to cook down into a sauce while you cook the pancakes. This works especially well for those berries that are looking a bit wilted that are likely not going to be eaten as is.

Heat a nonstick pan to medium heat, add a bit of olive oil and pour in some of the batter (I usually get two pancakes out of each banana). Immediately cover the skillet with a lid and cook on medium heat until the top is almost set. Flip the pancake to the other side to finish cooking for a bit and remove to a plate while you cook the next one (add a bit more oil before each pancake).

Serve with the fruit sauce that has been cooking and optionally add a sprinkle of nuts, more fresh fruits, or edible flowers (I used pineapple guava flowers that are blooming in my backyard).

I enjoy this recipe since it is quite sweet without needing to add any sugar so it helps curb my sweet tooth, it helps use up produce that might otherwise end up in the trash, and the protein from the eggs is nice and filling. It’s also gluten free for those that may be important for.
