I have been foraging for years and I also make a lot of jellies with water bath canning methods. I made wildflower jelly this year for the first time and found it took AGES to set. I had to reheat and add pectin and sugar twice. I re-boiled jars and lids, sealed them, ate one with no issue after a few days, and let them sit.
I just opened one after a few weeks and found that it smells and looks fine, was sealed properly, but it has these little snowflake-like crystals forming in it! I can't find anything online about this and I'm concerned.
These are NOT sugar crystals. I cautiously tasted one and they're quite sour. Did I use too much pectin in the process of trying to get these to set? I've never seen anything quite like this!
