Where percent beef do you think this is? Butcher just marked it as “Extra lean”. I’m thinking it looks like 90/10.

    looks like 80/20 to me. if not higher.

    usually 90/10 looks like someone sprinkled some fat into it. this almost looks like an equal mix of red meat and fat

    im sure it will be delicious either way

  3. From appearance I’d have guessed ~80/20, but ‘extra lean’ would imply higher.

    At first blush, 80, but I agree with folks who say it could be 85 or 90.

    I’d definitely use that for burgers or the base of a slow cooked meat sauce
