I found this recipe from when I was training and busted it back out today! Portabello mushrooms with the ribs scrapped out, cooked in a 400 degree oven for 7-10 minutes. Drain the mushrooms and Top with a little salsa, top with onions, grate some cheese and stir in one egg white for a protein boost. (I swear it's not as much cheese as it looks lol)

Served here with a peach feta arugula salad with balsamic vinegar.
