Take 2 – chix marinated in lemon & EVOO garlic and parsley, zucchini, and chickpea tomato feta and olive salad with oregano. Herbs grown in my container garden. ๐Ÿ˜Ž

    Marinated chicken breasts in olive oil, lemon juice, garlic and fresh parsley, grilled on a grill pan.

    Zucchini also grilled on pan with no seasonings.

    Chickpea salad – 2 cans of chickpeas, 2 small roma tomatoes chopped, about 3/4 cup of chopped olives, 1/4 cup lemon juice and olive oil, feta to taste. Added fresh oregano and thyme to taste.
