My mom bought me an extruder a couple years ago, and all attempts were just fails. All of the pastas I would make would just turn into broken up half inch pieces and were so soggy.
She bought me a big bag of semolina for my birthday (per my wish, I wanted to give this another go after so long) and she was coming over tonight, so I decided today was the day!
The extruder came with a recipe book for different pasta measurements, but I decided to follow one I found on here from another redditer @apeirophobicmyopic and I was in utter shock that not a single strand broke 😭 It was perfect! It is perfect!
Their recipe was
-2.5 cups flour (I used 1.5 semolina and 1 cup AP)
-2 whole eggs
-4 egg yolks
I added a tiny glug of olive oil and a bit of salt, along with the salted water, of course.
I made a sauce from fresh tomatoes (the one in the picture was later blended) and tossed the pasta into it with pasta water. I didn't get a picture because I was too excited!
Total success! Definitely was more of an egg noodle taste (duh, it was mostly eggs so that's dumb of me to say) and would have gone great with some type of mushroom sauce. Steak was overcooked for my liking, btw, should have pulled it 3 minutes sooner.
Does anyone have any extruder recipes they'd like to share for pasta?
Sorry for such a long post, it was just so exciting to achieve something I thought I couldn't do. I am so thankful for reddit!
