Mostly a quick lunch made from leftover veggies. Potatoes, brussel sprouts, zucchini all cooked in olive oil with some siracha.

    Looks good, but I’d add some kind of protein-rich food (either vegetarian or animal), to round this out. This looks like it would go well with some sardines or white beans for instance

    If you feel good eating just vegetables it looks great! But this would make me hungry in the middle of the afternoon.

    Looks delicious, but also like not enough food for a whole meal… I agree with adding protein… I also like to add fat to my meals. Maybe a dollop of full fat Greek yogurt would do both?
